Keto Pancake

Ingredients:
- Micro Ingredients® Monk Fruit With Allulose Sweetener (Golden)
- Micro Ingredients® Xanthan gum
- Almond Flour, Baking Powder, & Almond Milk
- Egg, Salt, Butter, Vanilla Extract, & Maple Syrup
Directions:
- In a bowl, mix 1 cup almond flour, 1 tbsp Monk Fruit Sweetener With Allulose (Golden), ¼ tsp Xanthan Gum, 1 tsp baking powder, and a pinch of salt.
- In another bowl, whisk 1 egg, ½ cup almond milk, 1 tsp vanilla extract, and 1 tbsp melted butter.
- Combine the wet and dry ingredients until smooth, adding more almond milk if needed for consistency.

Heat a greased skillet over medium heat and cook pancakes for 2–3 minutes per side, until golden brown.
- Serve with maple syrup and enjoy!
